3 ripe Avocados (halved, pitted, flash removed)
cup cream cheese
1 Tbsp lemon juice
Chili powder
1.333 cups cooked Prawn (peeled, entrails removed)
12 slices Bread
1 bunch Chives (chopped)
1 unwaxed Grapefruit (filleted)
Dill (to garnish)

Preparation steps

Mix together the avocado flesh and the cream cheese and season with lemon juice, salt, ground black pepper and a pinch of ground chilli.

Set aside 16 prawns and chop the rest. Cut circles out of the bread (approx. 6 cm diameter) and spread four with some of the avocado cream. Add some of the chopped prawns and place another bread circle on top. Press down gently and repeat twice finishing with the avocado cream. Spread the remaining cream around the sides of each tower and roll them in the chopped chives.

Cut the grapefruit fillets in half and use to garnish the towers along with the remaining prawns. Add a sprig of dill and serve.
