1 ⅔ cups Long grain rice (rinsed in several changes of water)
2 large eggs
1 Tbsp sesame oil
2 Tbsps Nut oil
2 scallions (finely chopped)
salt
freshly ground Black pepper

Preparation steps

1.
Combine the rice with 600 ml of slightly salted water in a large saucepan. Cook over a moderate heat until boiling.
2.
Cover and cook over a very low heat for about 25 minutes, until the water has been absorbed. Remove from the heat and leave to cool, covered, to one side.
3.
Lightly whisk the eggs with the sesame oil and a little salt.
4.
Heat the groundnut oil in a wok and stir-fry the cold rice for 3 minutes.
5.
Add the beaten eggs and stir-fry for a further 2-3 minutes.
6.
Season with salt and pepper, add the spring onions, and stir-fry for a further 2 minutes. Serve in small bowls.
