2 garlic cloves
1 small red Hungarian wax pepper
1 red chili pepper
1 tsp coarse Sea salt
2 dried bay leaves
1 tsp sweet ground paprika
1 tsp dried oregano
150 milliliters olive oil
70 milliliters Vinegar

Preparation steps

Rinse the parsley and thyme and shake dry. Remove the leaves from the stems and coarsely chop. Peel and finely dice the onion and garlic. Rinse the peppers and the chili, remove the seeds and stems, and finely dice both. Finely crush the salt with the bay leaves in a mortar, then mix in the paprika and oregano.

Add the parsley, thyme, onion, garlic, chili pepper, and spice mixture to a bowl. Stir until well combined. Cover and let infuse for 1 hour.

Mix the oil, vinegar, and 100 ml (approximately 3 ounces) of water into the herb mixture, and stir until thoroughly combined.
