1 handful parsley
2 red onions
2 garlic cloves
1 bay leaf
½ tsp dried Red pepper flakes
½ tsp peppercorns
50 milliliters Wine vinegar
60 milliliters olive oil
1 Tbsp lemon juice
salt

Preparation steps

1.

Rinse, dry, and finely chop the cilantro and parsley. Peel and finely chop the onion and garlic.

2.

Crush the bay leaf in a mortar with the chili flakes. and peppercorns. Mix with the herbs, onion, garlic, vinegar, and oil. Season to taste with lemon juice and salt. This is best made the day before, chilled in the refrigerator overnight.
