- 2 Tbsps olive oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- 3.333 cups ground Beef
- 1 red chili pepper (finely chopped)
- 1 Tbsp tomato puree
- 1 red Bell pepper (finely chopped)
- 1 Tbsp ground paprika (hot)
- ⅞ cup meat Broth
- 1 ½ cups canned Tomatoes
- 1 ½ cups canned Kidney beans (drained)
- To garnish
- Chives (chopped)
- 4 Tbsps Sour cream (10 % fat content)
Preparation steps
1.
Heat the oil and fry the onion and garlic. Add the mince and chile pepper and fry over a high heat.
2.
Add the tomato purée and fry briefly with the other ingredients. Stir in the chopped bell pepper and ground paprika. Pour on the broth and the tomatoes.
3.
Simmer gently for 30 minutes, stirring occasionally. Add a little more broth if necessary. Add the beans and simmer for a further 10 minutes until done.
4.
Season with salt and pepper. Spoon into bowls with a spoonful of sour cream on each. Garnish with chives and serve.
