Chili Con Carne
Peel onions and chop finely. Rinse chile peppers and chop.
Rinse celery, trim and chop. Peel carrot and also cut into small cubes.
Heat oil in a pot.
Fry chile peppers and onions until soft.
Add ground beef and fry until crumbly and brown.
Add celery and carrots.
Add tomato paste and pressed garlic and saute briefly.
Add broth and simmer for about 1 hour, stirring occasionally.
Add drained and rinsed beans and season with salt and pepper
Rinse parsley, pluck 10 parsley leaves and cut into fine strips. Serve chili con carne in bowls garnished with parsley.
