- 1 Chicken breast
- 4 scallions
- 1 Tbsp vegetable oil
- 400 grams Frozen vegetables (Asian or other mixed vegetables)
- 1 ⅕ liters Chicken broth
- 150 grams Udon Noodle (Japanese egg noodles)
- 2 Tbsps light soy sauce
- 1 Tbsp Oyster sauce
- peppers (freshly ground)
Preparation steps

Thaw the vegetables. Cut the chicken breast into cubes. Rinse scallions, trim and cut into pieces. Heat oil, add the chicken and sauté until browned, then add scallions and sauté briefly. Add the mixed vegetables and sauté while stirring. Pour in broth, bring to a boil and simmer for about 5 minutes.

Meanwhile, cook noodles according to package instructions, drain and add to the soup. Season with soy sauce, oyster sauce and pepper to taste. Serve hot.
