- 1 carrot
- ½ bunch scallions
- 1 walnut sized pc ginger
- 1 Tbsp sesame oil
- 150 grams Broccoli
- 750 milliliters Vegetable broth
- 1 stalk Lemongrass
- 100 grams Udon Noodle (Chinese egg noodles)
- 150 grams shrimp
- soy sauce (to taste)
- 2 Tbsps Lime juice
- Tabasco sauce (optional)
- cilantro (optional)

Preparation steps

Peel carrot and dice. Rinse scallions and cut into rings. Peel ginger and cut into thin slices. Put sesame oil in a saucepan and briefly fry carrot, scallions, ginger and broccoli. Deglaze with the broth. Rinse lemongrass stalk, roughly chop and add to the soup.

Simmer the soup. About 10 minutes before the end of cooking time, cook the noodles according to package instructions. Add shrimp to soup and simmer, 4 minutes. Season soup to taste with soy sauce and lime juice, and Tabasco and cilantro if using.
