400 grams Chicken breasts
1 red chili pepper
1 tsp freshly grated ginger
1 egg white
1 Tbsp light soy sauce
1 Tbsp breadcrumbs
12 sprigs Lemongrass
sesame oil
400 grams fresh, green Beans
150 grams Yogurt (0.1% fat)
2 Tbsps freshly chopped cilantro
1 Tbsp Lime juice

Preparation steps

Preheat the oven to broil.

Rinse the chicken breasts, pat dry and finely chop (possibly in the food processor). Rinse, clean and chop the chile. Combine together with the ginger, egg white, soy sauce, crumbs and chicken. Form the mixture into 12 small balls. In each place a stalk of lemongrass and shape the forms to oblong. Brush with sesame oil and place on a rack (include drip pan below). Broil about 8 minutes until browned on all sides.

Rinse beans, trim and blanch in salt water for about 8 minutes.

Combine the yogurt with cilantro and lime juice.

Put the drained beans on plates, drizzle the sauce over beans, place the skewers on top and serve as a small entrée or appetizer.
