- 12 sheets Lasagne noodle
- 2 Tbsps olive oil
- 2 Tbsps butter
- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 2 rashers Bacon (chopped)
- 2 Chicken breasts (skinned and chopped)
- 1 Zucchini (finely chopped)
- 8 medium Tomatoes (skinned, seeds removed and flesh chopped)
- 1 cup Parmesan (grated)
Preparation steps

Heat the oven to 180ºC (160º fan) 375ºF, gas 5.

Cook the lasagne sheets according to packet instructions and set aside.

Heat the oil and butter in a large pan and gently cook the onion until soft but not brown. Add the garlic and cook for 1 more minute then add the bacon and cook until the fat starts to run.

Add the chopped chicken, cook for 2 minutes then add the zucchini and cook gently until the zucchini has softened. Stir in the tomatoes and season with salt and pepper.
5.
Layer the lasagne sheets with the filling in an ovenproof dish, finishing with a layer of lasagne sheets. Sprinkle over the cheese and bake in the oven for 20 - 30 minutes or until the top is golden brown.
