Ingredients

- 150 grams Rice noodles
- salt
- 2 ready to cook, skinless Chicken breasts (120 grams or approximately 4 oz each)
- 3 Tbsps light soy sauce
- 50 milliliters Rice vinegar
- 20 grams cilantro
- 20 grams Chives
- 80 grams soybean sprout
- 8 leaves Rice paper (about 22 cm or 8 1/2 inch diameter)
Preparation steps
Cook the pasta in plenty of boiling salted water until al dente, drain and rinse in cold water.
Rinse chicken breasts, pat dry, sprinkle with a little soy sauce and place in a bamboo steamer. In a saucepan, combine 200 ml (approximately 1 cup) water with rice vinegar. Bring to a boil, set bamboo steamer over the water and cook 8-10 minutes. Remove the chicken breasts, let cool and cut into strips.
Rinse the herbs, shake dry and remove cilantro leaves.
Pour boiling water over bean sprouts in a colander, drain well.
Fill a shallow dish (slightly larger than the sheets of rice paper) with water. Spread a cloth on the work surface in front of the plate and keep a second cloth handy. Soak the rice sheets one at a time in water for about 1 minute. Then gently spread on the cloth and pat dry with a second cloth. Place some pasta, herbs, bean sprouts and chicken strips in the center of the rice paper and sprinkle with a little soy sauce. Turn in the opposite sides and then roll rice paper around the filling.
To serve, cut rolls in half and serve on plates with small bowls of dippping sauce as desired.
