- 18 ozs Chicken breasts
- 2 slices white Bread
- 2 Tbsps Yogurt
- 1 clove garlic cloves
- 1 Tbsp freshly grated ginger
- 1 generous pinch Turmeric
- 1 Tbsp chopped cilantro
- 1 egg
- salt
- cayenne pepper
- white breadcrumbs (as necessary)
- Oil (for frying)

- 1 Mango
- ⅜ cup Mayonnaise
- 1 Tbsp chopped cilantro
- lemon juice
- cilantro (to garnish)
Preparation steps

Wash the chicken breasts, pat dry and mince or chop very finely. Remove the crusts from the bread, make the bread into breadcrumbs and mix with the yoghurt.

Peel and finely chop the garlic and mix with the ginger, turmeric, chopped coriander, egg, breadcrumbs and minced chicken. Season with salt and cayenne pepper. Add more breadcrumbs if the mixture is too soft. Form into about 20 small patties. Heat the oil and fry for about 2 minutes each side, or until golden brown.

Peel the mango, cut the flesh away from the stone and dice finely. Mix with the mayonnaise and chopped coriander and add lemon juice to taste.

Arrange the patties on plates, add a small spoonful of mayonnaise to each patty and serve garnished with coriander.
