- 1 Red onion
- 2 Tbsps vegetable oil
- 1 Tbsp mixed, chopped Fresh herbs
- 1 tsp medium hot Mustard
- 1 egg
- 400 grams ground chicken
- breadcrumbs (as needed)
- salt
- peppers
- 4 Lettuce
- 2 Tomatoes
- 100 grams Mangoes
- 1 Tbsp Mayonnaise
- 1 generous pinch Curry powder
- 4 Whole wheat buns (with grains as desired)
Preparation steps
Peel the onion and chop finely. Sweat until translucent in 1 tablespoon hot oil, stir in the herbs and leave everything to cool. Mix with the mustard and the egg into the meat. Mix in breadcrumbs in portions and season with salt and pepper. Shape 4 patties and cook them until golden brown on both sides, turning occasionally for 6-8 minutes in a hot pan in the remaining oil.
Rinse the lettuce, shake dry and pluck small. Rinse the tomatoes, remove the stems and cut into slices. Puree the mango pulp and mix with the mayonnaise and curry.
Cut the bread horizontally and toast the cut surfaces golden brown as desired. Place a lettuce leaf on each roll bottom, top with a burger and spread with mango mayonnaise. Top with the tomatoes and finish with the lids. Serve immediately.
