Preparation steps

1.

Rinse chicken, pat dry, and cut into long, thin pieces. Season with salt and pepper. Mix bread crumbs with paprika. In a bowl, whisk egg.

Dredge chicken in flour on all sides and tap off excess. Then dip pieces in beaten egg and finally, coat in breadcrumbs. Press crumbs firmly to help them adhere. In a pan, fry chicken fingers in hot clarified butter on all sides until golden-brown. Drain on paper towels and serve.
