- 1 cup + 2 TBSP softened butter
- ½ cup sugar
- 2 ½ cups all-purpose flour
- ⅔ cup Rice flour
- all-purpose flour (for working the dough)
- sugar (for sprinkling)

Preparation steps
1.
In a bowl, beat together the butter and sugar with a pinch of salt until light and fluffy. Add the sieved flour and rice flour. Turn out onto a floured work surface and knead to form a smooth dough.

Roll the dough out to around 1/2 inch thick and cut into shortbread fingers (approx. 1-inch x 4-inch). Prick each one a few times with a fork and sprinkle with sugar.

Line a baking tray with grease-proof paper and put the fingers on the tray. Chill for around 30 minutes.

Meanwhile, heat the oven to 200°C / 400°F.

Bake the shortbread in the oven for 15-20 minutes until golden. Carefully remove from the tray and cool thoroughly on a wire rack.
6.
If desired, wrap with paper to make small parcels and give as a gift.
