3 ½ cups all-purpose flour
1 cup brown sugar (heaped)
1.333 cups butter

Preparation steps

In a mixing bowl, mix the flour and sugar with 2 pinches of salt. Use a dough scraper to chop the butter into the mixture, then knead to form a smooth dough. Wrap in cling film and chill for around 1 hour.

Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5 and line a baking tray with grease-proof paper.
3.
Roll the dough out into a rectangle of even thickness, approx. 1-2 cm, and place on the tray. Use a cocktail stick to prick rows of holes in the dough. Bake for 20-30 minutes until golden.
4.
While still hot, cut the shortbread into fingers measuring approx. 2x8 cm. Cool on a wire rack.
