- 500 grams Chicken breasts
- 3 Tbsps sunflower oil
- 1 Red Bell pepper (seeded and diced)
- ½ bunch scallions (cut into thin strips)
- 150 grams Pineapple (cut into small pieces)
- 100 grams soybean sprout
- 2 Tbsps tomato puree
- 1 Tbsp honey
- 1 Tbsp dry sherry
- 1 tsp White vinegar
- 2 tsps grated fresh ginger

Preparation steps

Cut chicken into bite-sized pieces. Heat oil in a large pan or wok and stir-fry the chicken 4-5 minutes, then add the peppers and stir-fry for 5 more minutes. Add the pineapple, scallions, tomato paste, honey, sherry, vinegar and ginger and stir-fry 2-3 more minutes.

Serve hot with rice.
