3 Tbsps sunflower oil
1 Red Bell pepper (seeded and diced)
½ bunch scallions (cut into thin strips)
150 grams Pineapple (cut into small pieces)
100 grams soybean sprout
2 Tbsps tomato puree
1 Tbsp honey
1 Tbsp dry sherry
1 tsp White vinegar
2 tsps grated fresh ginger

Preparation steps

Cut chicken into bite-sized pieces. Heat oil in a large pan or wok and stir-fry the chicken 4-5 minutes, then add the peppers and stir-fry for 5 more minutes. Add the pineapple, scallions, tomato paste, honey, sherry, vinegar and ginger and stir-fry 2-3 more minutes.
