- 2 Tbsps Oil
- 4 Chicken legs (jointed)
- 4 large new Potato (scrubbed and cut into wedges)
- 2 onions (cut into wedges)
- 2 cloves garlic cloves (thinly sliced)
- 2 lemons (cut into wedges)
- 1 bunch thyme
- ¾ cup chicken stock (or water)

Preparation steps
1.
Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
2.
Heat the oil in an ovenproof and flameproof dish on the hob and brown the chicken pieces on all sides. Remove the chicken from the pan and set aside.
3.
Add the potatoes, onions, garlic and lemons to the dish and coat them in the oil then return the chicken and scatter over the thyme.
4.
Season with salt and pepper, pour over the stock and cover with foil. Place in the oven and roast for about 20 minutes then remove the foil, baste the chicken and vegetables with the juices and continue cooking until the chicken is golden brown and cooked through.
