- 2 Chicken thigh (trimmed of excess fat)
- 2 Chicken drumstick (trimmed of excess fat)
- 3 cups cherry Tomatoes
- 4 sprigs rosemary
- 1 cup low-sodium chicken stock
- 2 Tbsps olive oil
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the oven to 180°C (160° fan) | 350 F | gas 4.

Sit the chicken pieces in a roasting tray and arrange the cherry tomatoes around them. Strip the leaves from two sprigs of rosemary and scatter over the dish.
3.
Pour in the stock and then drizzle everything with the olive oil. Season with salt and freshly ground black pepper.

Roast for 50 - 55 minutes until the chicken is golden on top and cooked through. Remove the dish from the oven and leave it to stand for 5 minutes.
5.
Serve with a garnish of the remaining rosemary.
