2 tablespoons clarified butter
2 tablespoons lemon juice
1 teaspoon Curry
2 Peaches
1 scallion
1 tablespoon roasted Peanuts
1 tablespoon Cashews
1 tablespoon White vinegar
salt
freshly ground freshly ground pepper
½ teaspoon sugar
3 tablespoons Whipped cream
2 tablespoons Corn oil
Banana leaf (for serving)

Preparation steps

Heat the butter in a skillet. Cut chicken breasts into bite-sized pieces and saute quickly in the butter until cooked through. Add salt and pepper, sprinkle with curry powder and set aside. Blanch the peaches in a pot of boiling water  for 30 seconds. Remove, run under cold water and peel. Halve the fruit, remove the stone and cut the flesh into 2-3 cm (approximately 3/4-inch to 1 1/4-inch ) pieces. Transfer to a bowl.

Add the chicken to the bowl of peaches along with the vinegar, lemon juice, salt, pepper, sugar, cream and oil. Coarsely chop the peanuts and cashews. Rinse and thinly slice the scallions. Add the scasllions and nuts to the chicken mixture. Spoon the mixture into the banana leaves, season with pepper and serve.
