- 6 Peaches
- 4 Tbsps olive oil
- 4 Tbsps lemon juice
- salt

- 2 Tbsps parsley
- vegetable oil (for greasing)

Preparation steps

Preheat the oven to 250°C (approximately 485°F). Rinse and trim the peppers. Halve and remove the seeds and membranes. Quarter and place cut side up on a baking sheet. Bake in the oven until the skin begins to bubble and blacken. Remove from the oven, cover with a damp kitchen towel, and let rest. Remove the skin, julienne crosswise, and cool completely.

Blanch the peaches in boiling water and remove. Peel, halve, and remove the stones. Thinly slice.

Mix the olive oil and lemon juice, then season with salt and pepper. Mix the peaches and peppers, then add the dressing. Chill in the refrigerator overnight.
4.
Garnish with the parsley and serve.
