300 grams Couscous (instant)
400 milliliters Vegetable broth
4 Chicken breasts (about 120 grams each)

2 Tbsps olive oil
1 Cucumber
1 green Bell pepper
150 grams Cherry tomatoes
50 grams dried Tomatoes (in oil)
2 Tbsps finely chopped cilantro
1 Tbsp scallions
1 Tbsp lemon juice

Preparation steps

1.

Place the couscous in a bowl, pour boiling broth over it and leave to soak for about 10 minutes.

Rinse the chicken, pat dry and cut into pieces. Season with salt and pepper and fry until golden brown for 2-3 minutes in a pan with some oil. Remove from the heat and set aside.

Peel the cucumber, cut in half lengthwise, remove the seeds and dice. Rinse, halve and trim the bell pepper and cut into small pieces. Rinse and halve the cherry tomatoes. Drain the dried tomatoes and chop coarsely.

Collect 2 tablespoons of the tomato oil, mix with all the salad ingredients and the herbs and then mix into the couscous.

Season with lemon juice, salt and pepper and serve on plates while still warm.
