2 ¼ cups all-purpose flour
1 Tbsp Baking powder
1 tsp sugar
½ tsp salt
1 cup grated, strong Cheddar cheese
4 ozs cooked ham (chopped)
3 ozs red peppers (in oil)
2 eggs
cup Buttermilk
cup sunflower oil

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Grease a 12 hole muffin tin.
2.
Sift the flour and baking powder into a mixing bowl. Stir in the sugar, salt, 3/4 of the cheese, ham and peppers.
3.
Beat together the eggs, buttermilk and oil and pour into the dry ingredients. Stir until just combined. The mixture will be lumpy.
4.
Spoon into the tins and sprinkle the tops with the remaining cheese. Bake for 20-25 minutes until risen and golden. Serve warm.
