500 grams starchy potatoes
1 shallot
1 garlic clove
2 egg yolks
2 Tbsps Whipped cream
2 Tbsps grated Cheese (such as Gouda, Emmental)
2 Tbsps Potato starch
salt
freshly ground peppers
freshly grated Nutmeg

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Grease the wells of a muffin tin with oil.

Peel the potatoes and grate finely. Peel and chop the shallot and garlic. Combine the potatoes, shallot and garlic in a large bowl. Mix in the egg yolks, heavy cream, grated cheese and potato starch. Season with salt, pepper and nutmeg and spoon the mixture into the prepared muffin tin. Bake for 35 minutes, until golden brown. Remove from the oven, allow to cool slightly and serve.
