250 grams Pastry flour
2 tsps Baking powder
½ tsp Curry powder
250 grams Pumpkin (such as butternut squash)
2 eggs
70 milliliters olive oil
80 milliliters Vegetable broth
200 grams Sour cream

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Line a muffin tin with paper liners. 

2.

Combine the flour, baking powder, curry powder and grated cheese in a large bowl. Grate the pumpkin and add to the bowl. 

3.

Whisk together the eggs, oil, broth and sour cream. Add to the flour mixture and stir until well combined. 

4.

Spoon the batter into the prepared muffin tin and bake for 25 minutes. Remove from the oven and allow to cool slightly in the muffin tin. Remove from the tin and serve warm or cold.
