- 0.333 cup Polenta (cornmeal)
- 1 Tbsp caster sugar
- 1 Tbsp Baking powder
- salt

- 12 sunblush Tomatoes (chopped)
- ½ cup Mozzarella (drained and chopped)
- 1 Tbsp fresh Basil (torn)
- 1 cup milk
- 2 large eggs
- 4 Tbsps olive oil
- 4 tsps grated Parmesan
- 18 cherry Tomatoes (halved)
- To garnish
- 9 sprigs fresh Basil

1 Cutting board, 1 Small knife, 1 Fine grater, 1 Small bowl, 1 Tablespoon, 1 Mortar, 1 Aluminum pan, 1 Large knife
Preparation steps

Heat the oven to 190°C (170° fan) 375°F gas 5. Place paper cases in a 9 hole muffin tin.

Mix together the flour, polenta, sugar and baking powder in a mixing bowl. Add a generous pinch of salt and a pinch of pepper. Stir in the tomatoes, mozarella cheese and basil leaves.

Whisk together the milk, eggs and olive oil.

Pour into the flour mixture and stir until just combined. The batter will be lumpy.

Spoon into the paper cases. Sprinkle over the Parmesan cheese.
6.
For the garnish: put the cherry tomatoes into a greased roasting tin. Bake the tomatoes and muffins for 20 minutes until the muffins are well risen and firm and the tomatoes are tender.
7.
Top the muffins with the roasted tomatoes and garnish with basil. Serve warm.
