Preparation steps

1.
Halve the leek lengthwise, wash, trim and cut into strips. Blanch in plenty of boiling, salted water for 2 minutes, then drain, refresh in ice-cold water and drain well.

Break the eggs into a bowl, press in the garlic and whisk with the cream and grated cheese. Season with salt and pepper.

Heat two nonstick frying pans (with lids) and put 1 tbsp clarified butter into each.
4.
Add the leeks to the egg mixture. Divide the mixture between the two pans and cook over a low heat with the lids on for 8-10 minutes, until the frittatas have set. Turn the frittatas over using the lids to help you and fry the other side for 2-3 minutes. Serve in the pans. Serve with bread.
