- 1 kitchen-ready Roasted Chicken about 1.3 kg (approximately 3 pounds)
- 6 Tbsps olive oil
- 750 grams large onions
- 6 ripe Tomatoes
- Salt and freshly ground pepper
- 180 grams green, pitted Olives
- 150 grams Graviera cheese

Preparation steps
1.
Rinse the hen inside and out under running water, then cut it into serving pieces. Heat the oil in a shallow pan and fry the hen pieces until golden brown on each side.

Peel and roughly chop the onions. Blanch the tomatoes in boiling water for 1 minute, peel, remove the stem and seeds and coarsely chop the pulp.

Add the onions and tomatoes into the pan and season with salt and pepper. Cover and simmer for about 1 hour.

Chop the olives into small pieces and put into the pan with 45 minutes of cooking left. Sprinkle the cheese over the top with 5-10 minutes of cooking left. Put on the lid and allow the cheese to melt.
