- 500 grams Pastry flour
- 2 pinches salt
- 250 grams shredded Gruyere
- 8 eggs
- 1 packet Baking powder
- 2 tsps baking soda
- 200 milliliters olive oil
- 200 milliliters dry white wine
- vegetable oil (for greasing the pan)

Preparation steps
1.
Separate the eggs, beat the egg whites with the salt until stiff peaks form. Whisk the yolks and white wine together until foamy. Slowly incorporate the olive oil into the yolks while whisking constantly.

Mix the flour, baking powder and baking soda together. Slowly fold into the yolk mixture alternately with the egg whites. Stir the olives into the dough.

Preheat the oven to 180°C (approximately 350°F). Grease a loaf pan with oil. Pour the dough into the prepared pan and sprinkle with the shredded cheese.
4.
Bake for 50-60 minutes, until golden brown or a toothpick inserted comes out clean.
5.
Remove the bread from the oven and serve warm or cold.
