- 4 eggs
- 1200 grams Quark
- 3 centiliters Baileys
- 150 grams sugar
- 2 Tbsps lemon juice
- 2 Tbsps cornstarch
- salt
- 180 grams ground almonds
- 2 Tbsps dried Raspberries (chopped)
- 3 Tbsps Cocoa
- 1 egg white
- butter (for the pan)
- Fruit (to garnish)

Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F).

Separate the eggs and beat the yolks with the cream cheese, Baileys, sugar, lemon juice and cornstarch. Beat the egg whites to stiff peaks and fold into the cream cheese mixture.
3.
Combine 1/3 of the mixture with the ground almonds, raspberries and cocoa powder. Whisk the remaining egg white until stiff and fold into the mixture. Pour into the prepared springform pan.

Pour the remaining cream cheese mixture on top and smooth out. Bake for 40-45 minutes. If you notice the top becoming too brown, top with buttered parchment paper or foil.
5.
Remove the cake from the oven and allow to cool completely. Carefully remove from the springform pan, slice and serve garnished with fresh fruit.
