For the noodles
300 grams Pastry flour
3 eggs
250 grams Quark
150 milliliters Buttermilk
Iodized salt (with fluoride)

750 grams Brussels sprouts
4 onions
2 Tbsps butter
150 grams grated Emmentaler cheese (30% fat)
freshly ground peppers
½ tsp Caraway

Preparation steps

For the noodles, mix all the ingredients and knead into a smooth dough until it bubbles. Let the dough rest covered for about 20 minutes.

Meanwhile, clean the Brussels sprouts, rinse, cut a cross at the stem end, cut in half, and cook for 10-12 minutes in salted water, depending on size.

Then drain and leave to evaporate.

Roll the dough and pass through noodles machine to form the noodles. Cook the noodles in the boiling water in portions. Stir occasionally and when the noodles float over the surface, lift with a skimmer from the water and drain well.

Peel the onions, cut into rings and fry in butter. Add in the noodles, Emmentaler cheese, caraway seeds and Brussles sprouts, and toss. Season with salt and pepper. Serve in warmed plates.
