1.333 cups Oyster mushrooms (cleaned and roughly chopped)
3 Tbsps olive oil
1 Tbsp white balsamic vinegar
thyme (to garnish)

Preparation steps

1.
Preheat the oven to 180°C (160° fan) | 350F | gas 4.
2.
Toss together the brussels sprouts, onion, mushrooms, olive oil, balsamic vinegar, and seasoning in a large roasting tray.
3.
Roast in the oven for 40 - 45 minutes until the sprouts are tender and golden.
4.
Remove from the oven and serve on a platter, garnished with thyme.
