- 4 large potatoes
- 2 Tbsps Oil
- 1 shallot (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 8 rashers Bacon (chopped)
- 2 Tomatoes (deseeded and chopped)
- 4 Tbsps butter
- 1 ½ cups grated Cheese

Preparation steps
1.
Prick the potatoes with a fork and rub with a little of the oil. Cook in the microwave for 5-6 minutes or according to the microwave instructions.
2.
Meanwhile, heat the remaining oil in a pan and fry the shallot, garlic and bacon until the bacon is browned and crisp.
3.
Add the chopped tomatoes and cook for 2 more minutes.
4.
Slice the cooked potatoes open, add a little butter then add the cheese and top with the bacon mixture.
5.
Add the remaining butter, sprinkle with salt and pepper and serve immediately.
