- ¾ cup warm-hot water
- 1 Tbsp honey
- 2 tsps Dried yeast
- 1 cup sorghum flour
- ¾ cup Brown rice flour
- ½ cup Tapioca starch
- 1 ¾ tsps xanthan gum
- 1 tsp salt
- 2 eggs
- 2 Tbsps olive oil
- ½ tsp Cider vinegar
- ¾ cup grated Cheese (e. g. cheddar)
Preparation steps
1.
Combine the honey and 180 ml|3/4 cup warm water in a bowl. Sprinkle in the yeast and stir to combine. Leave to prove for 7 minutes.

Line a large baking tray with non-stick baking paper.

Combine the dry ingredients in a mixing bowl.

Whisk together the eggs, oil and vinegar.
5.
Add the wet ingredients to the dry and stir until it’s paste-like, then slowly add the yeast mixture, mixing to a thick smooth dropping consistency. Add the remaining water if necessary.

Drop scoops of the dough, using an ice cream scoop, onto the baking tray.
7.
Shape the dough with wet hands and gently flatten each ball of dough to about 2cm|1"thick.
8.
Sprinkle with grated cheese and leave in a warm place to rise for 30 minutes.
9.
Heat the oven to 190°C (170° fan) 375°F gas 5.
10.
Bake for 17-19 minutes until golden brown. Place on a wire rack to cool completely.
