½ cup jarred, marinated roasted Red pepper (drained and roughly chopped)
3 cups shredded, extra sharp Cheddar cheese
¼ cup softened cream cheese (at room temperature)
3 Tbsps Mayonnaise
½ tsp lemon juice
1 tsp crushed Red pepper flakes
salt (to taste)
freshly ground Black pepper (to taste)
4 large, white Flour tortillas
Lettuce

Preparation steps

In a medium bowl, combine chopped peppers, shredded cheddar, cream cheese, mayonnaise, lemon juice, and red pepper flakes. Using a rubber spatula or wooden spoon, blend the ingredients together until the spread is mixed. Season to taste with salt and black pepper.

Spread about 1/2 cup of pimento cheese on each tortilla, covering about 3/4 of the surface (leave about 1/4 of the tortilla uncovered). Layer lettuce leaves on top of cheese. Carefully roll each tortilla and serve.
