- ½ cup jarred, marinated roasted Red pepper (drained and roughly chopped)
- 3 cups shredded, extra sharp Cheddar cheese
- ¼ cup softened cream cheese (at room temperature)
- 3 Tbsps Mayonnaise
- ½ tsp lemon juice
- 1 tsp crushed Red pepper flakes
- salt (to taste)
- freshly ground Black pepper (to taste)
- 4 large, white Flour tortillas
- Lettuce

Preparation steps

In a medium bowl, combine chopped peppers, shredded cheddar, cream cheese, mayonnaise, lemon juice, and red pepper flakes. Using a rubber spatula or wooden spoon, blend the ingredients together until the spread is mixed. Season to taste with salt and black pepper.

Spread about 1/2 cup of pimento cheese on each tortilla, covering about 3/4 of the surface (leave about 1/4 of the tortilla uncovered). Layer lettuce leaves on top of cheese. Carefully roll each tortilla and serve.
