Chard is packed with minerals and antioxidants, while the mozzarella adds valuable protein and calcium to this dish.

Feel free to substitute the mozzaerlla with goat cheese for a bit more creaminess.

Preparation steps

1.

Rinse chard and cut out tough stalks. Blanch in boiling salted water for about 1 minute, drain, rinse in cold water, drain and squeeze well, chop finely. Rinse herbs, pluck off leaves, and chop coarsely. Cut mozzarella into about 1/2 inch cubes. Whisk eggs with cream, season well with salt and pepper.

2.

Preheat the oven to 175° F.

3.

Heat 1 tablespoon of oil in a nonstick pan. Pour about 1/4 of egg mixture, sprinkle with about 1/4 of chard, add 1/4 of mozzarella, and some herbs. Cook for about 3-4 minutes on low heat. Finish cooking in a preheated oven at 175°F and transfer to a plate. Make three more omelets in the same manner. Garnish with herbs and serve.
