1 Swiss chard (about 26 ounces)
salt
2 handfuls mixed Fresh herbs (such as parsley, chervil, dill)
1 scoop Mozzarella (about 4 ounces)
10 eggs
1 ½ ozs Whipped cream
freshly ground peppers
4 Tbsps Canola oil
fresh Fresh herbs (for garnishing)

Preparation steps

Rinse chard and cut out tough stalks. Blanch in boiling salted water for about 1 minute, drain, rinse in cold water, drain and squeeze well, chop finely. Rinse herbs, pluck off leaves, and chop coarsely. Cut mozzarella into about 1/2 inch cubes. Whisk eggs with cream, season well with salt and pepper.

Preheat the oven to 175° F.

Heat 1 tablespoon of oil in a nonstick pan. Pour about 1/4 of egg mixture, sprinkle with about 1/4 of chard, add 1/4 of mozzarella, and some herbs. Cook for about 3-4 minutes on low heat. Finish cooking in a preheated oven at 175°F and transfer to a plate. Make three more omelets in the same manner. Garnish with herbs and serve.
