600 grams Celery root

2 organic Oranges
½ tsp liquid honey
3 Tbsps olive oil

Preparation steps

Soak raisins in apple juice.

Peel celery root, rinse and grate coarsely. Blanch briefly in boiling salted water, drain, rinse in cold water and drain well. Peel the oranges thoroughly, taking care to remove the white skin. Cut segments out of separating membranes. Cut segments into bite-sized pieces. Collect the orang juice and squeeze remaining juice out of the membranes.

Mix 3 tablespoons orange juice with the honey and oil and season with salt and pepper. Mix the celery root with oranges, drained raisins and vinaigrette, season again with salt and pepper and let stand briefly before serving. Serve in salad bowls.
