Preparation steps

1.

Peel and roughly chop the celery root, apples, and onions. Halve the garlic bulb and place it along with the vegetables on a baking sheet lined with parchment paper.

Drizzle with a bit of oil, and season with salt and pepper. Bake in a preheated oven at 180°C (350°F) for about 45 minutes, or until the vegetables are soft.

3.

Blend the roasted vegetables with the oat milk and vegetable broth until smooth.

4.

Season with nutmeg and chili flakes. Serve with a bit of yogurt and croutons on top.
