1 small Celery root (with greens attached, about 150 grams)
1 shallot
1 centimeter ginger
1 Tbsp butter
1 tsp Curry
2 Saffron
250 milliliters Vegetable broth
2 slices Toast
1 Apple (tart)
1 Tbsp lemon juice
4 Celery chips (dried celery slices)

Preparation steps

Peel and dice celery root. Rinse celery root leaves, shake dry and set aside for garnish. Peel and finely chop shallot. Peel and finely mince ginger. In a pot, fry shallot and ginger in 1 tablespoon melted butter until translucent.

Add celery root, curry and saffron and cook briefly. Add broth and simmer over low heat, about 30 minutes. Meanwhile, rinse, halve and remove seeds from apple. Cut apple into quarters. Cut 4 thin slices from one apple quarter and set aside. Peel and finely chop remaining apple and mix with lemon juice. Remove crusts from bread slices and soak bread in lukewarm water. Squeeze bread to remove excess liquid. Five minutes before the end of the cooking time, add bread and chopped apple to soup. Puree soup until smooth and strain through a sieve, if desired. Heat soup until warmed through and season with salt and pepper. Fry apples slices in remaining butter. Ladle soup into 4 cups and garnish with apple slices, celery root leaves and celery chips.
