1 ½ cups Basmati rice
1 egg
3 Tbsps soy sauce
1 Tbsp Corn starch
4 cups Chicken breasts (finely chopped)
2 Tbsps Peanut oil
1 ¾ cups lightly salted Cashews
1 garlic clove (finely chopped)
1 scallion (cut into thin strips)

Preparation steps

1.
Cook the rice according to the directions on the packet.
2.
Mix the egg, soy sauce and starch into a smooth paste. Season with white pepper, add the chicken and marinate.
3.
Heat 1 tsp oil in a wok and fry the cashew nuts until they are just brown. Pat dry with kitchen paper
4.
Heat the remaining oil in the wok and fry the meat in small portions at a high temperature. Remove onto a plate.
5.
Once all the meat has been fried, turn the temperature down to a medium heat and fry together the chicken, cashew nuts and garlic. Stirring continuously allow everything to stew for approx. 5 minutes.
6.
Divide the rice into 4 bowls and add the chicken. Alternatively serve the rice and chicken in separate bowls. Garnish with the chopped spring onions.
