Carrot and Celery Salad with Parsley
Peel carrots, celery and apple. Cut apple into quarters, core and cut into thin slices. Cut celery and carrots into thin strips.
Combine vinegar with lemon juice, honey and oil. Season with salt and pepper. Combine dressing with all salad ingredients and let stand for about 15 minutes. Sprinkle with parsley and season with salt and pepper, to taste. Serve.
