Preparation steps

1.

Mix the yogurt, walnut oil, lemon juice, brandy vinegar and mustard and season with salt and pepper.

Peel the celery root and cut into thin sticks. Blanch in boiling salted water, drain in a colander, rinse with cold water and drain well.

3.

Peel the apples, cut into quarters, remove the core and coarsely grate.

4.

Rinse the parsley, shake dry and pluck off the leaves. Finely chop the parsley and mix with grated apple, celery root and yogurt dressing. Season the salad to taste with salt and pepper and serve in bowls.
