- 800 grams Napa cabbage
- 100 grams smoked Pancetta
- 1 onion
- 2 Tbsps vegetable oil
- 1 tsp powdered sugar
- 2 Tbsps Wine vinegar
- 120 milliliters Beef broth
- salt
- freshly ground peppers
- Caraway (ground)
- 2 Tbsps freshly chopped parsley

Preparation steps

Rinse cabbage and cut into pieces. Cut bacon into small cubes. Peel onion and dice into into small cubes. Heat oil in a pan and saute bacon and onion for a few minutes. Add powdered sugar, vinegar and a little broth and saute briefly. Add cabbage and season with salt, pepper and cumin powder. Simmer, covered, for about 10 minutes or until cabbage is al dente. Add more broth as needed.

Just before serving, stir in parsley and simmer until almost all liquid has evaporated. Season to taste and serve.
