250 milliliters Vegetable broth
2 Tbsps butter

150 grams Spelt semolina
1 egg
freshly grated Nutmeg
1 l Vegetable broth
1 carrot
freshly ground peppers
2 Tbsps scallions

Preparation steps

1.

Boil 250 ml (approximately 1¼ cups) vegetable broth with the butter and a pinch of salt. Sprinkle the spelt semolina and stir until the semolina mixture leaves the pan base. Remove from the heat and stir in the egg. Season with salt and nutmeg and allow to cool.

2.

Boil 1 litre (approximately 5 cups) vegetable broth. Peel the carrot and cut into slices. Add the sliced carrot to the broth and season with salt and pepper.

3.

Make small balls out of the spelt semolina mixture and drop into the hot broth. Cook only for about 10 minutes, do not overcook.

4.

Serve sprinkled with chives.
