- For the broth and dumplings
- 1 l Beef broth
- chopped parsley (for garnish)
- 100 grams softened butter
- 250 grams Semolina flour
- 4 eggs
- salt
- Nutmeg
- For the vegetables
- 1 carrot
- 1 pc Leeks (about 6 cm) (approximately 2 inches)
- 1 cut Celery
- 4 Tbsps scallions

Preparation steps

For the semolina dumplings: Season the butter with salt and nutmeg and whip until fluffy. Alternately beat in the semolina and eggs then set aside for at least 30 minutes. Bring the broth to a boil. Shape the dumplings into quenelles with teaspoons.

Add the dumplings to the broth and simmer over low heat for about 15-20 minutes. Meanwhile, rinse the vegetables and julienne. Add to the broth for the last 10 minutes. Serve the soup and dumplings in serving bowls sprinkled with chives and parsley.
