Ingredients

For the broth
1 l Beef broth
1 bunch Chives
For the dumplings
40 grams softened butter
75 grams Semolina flour
1 egg
salt
freshly grated Nutmeg
1 Tbsp finely chopped parsley

Preparation steps

1.

For the dumplings, stir the butter until creamy and mix in some of the semolina. Add the eggs, mix well and gradually stir in the remaining semolina. Season with salt and nutmeg, stir in the parsley and let the dough rest for at least 20 minutes.

Bring the broth to a boil. Using two spoons, form the dough into dumplings and gently drop into the broth. Simmer for about 15 minutes on low heat.

Rinse the chives, shake dry and cut into small rings.

4.

Pour the broth into bowls along with some dumplings and serve sprinkled with chives.
