1 Tbsp butter
4 rashers smoked Bacon (diced)
1 onion (finely chopped)
8 slices stale white bread (chopped into coarse breadcrumbs)
4 Tbsps chopped parsley
1 egg (beaten)
½ cup milk
1 Tbsp flour
1 tsp dried marjoram
5 cups clear Beef stock
chopped Chives (to garnish)

Preparation steps

1.
Heat the butter in a frying pan and gently fry the bacon until the fat starts to run. Add the onion and cook until the onion is soft but not brown.
2.
Mix the onion and bacon with the breadcrumbs in a large bowl and add the egg, milk, flour and marjoram. Season with salt and pepper and shape into 8 dumplings.
3.
Heat the beef stock in a large pan until it boils then add the dumplings and simmer gently for about 12 minutes.
4.
Serve in warmed bowls garnished with the chives.
