Preparation steps

1.

Peel carrots and cut into sticks. Rinse cabbage, cut into quarters, remove stalk and cut leaves into thin strips. Peel onion, cut in half and then into strips. Saute in hot oil until translucent. Deglaze with wine and broth. Season with salt and pepper and add cabbage and carrots. Cover and simmer until tender, about 10 minutes.

2.

Preheat oven broiler.

3.

Season cabbage and pour into 4 ovenproof ramekins. Cut cheese into slices, place on top of ramekins and sprinkle with caraway seeds. Broil for about 5 minutes, watching carefully, until cheese melts. Serve sprinkled with chives.
