Breaded Veggie Patties for Kids

- 2 potatoes (diced)
- 1 carrot (diced)
- 3 ozs Green beans (sliced)
- 1 oz green peas
- 2 eggs (beaten)
- 1 ½ cups breadcrumbs
- Oil (for frying)

Free from nuts.
Put the vegetables in a pan with enough water to cover. Bring to a boil, reduce the heat to low, cover and simmer for about 15 minutes, until tender. Drain well.
Mash the vegetables with a potato masher, leaving a few small chunks. Season to taste with salt and pepper.
Add 1 egg and 30 g|1/2 cup breadcrumbs. Mix well until firm. If the mixture is too wet, add more breadcrumbs. Pat the mixture into a rectangle about 1cm| 1/2" thick on non-stick baking paper. Chill for 30 minutes.
Cut out star shapes with a cookie cutter or stencil and dust with flour.
Dip the shapes in beaten egg and then into the remaining breadcrumbs.
Heat the oil in a large frying pan over a medium heat and fry the stars on both sides until golden brown. Drain on absorbent kitchen paper.
