- 1 day-old Ciabatta (500 grams)
- 5 Tbsps olive oil
- 600 grams Cherry tomatoes (Red and yellow)
- 2 Red onions
- 1 garlic clove
- 250 grams Mozzarella
- 2 Tbsps white balsamic vinegar
- 2 Tbsps lemon juice
- 1 pinch sugar
- Sea salt
- freshly ground peppers
- 1 handful Basil

Preparation steps
1.
Cut the ciabatta into bite-sized cubes and toast in 2-3 tablespoons of olive oil until golden brown and crispy. Drain on paper towels.

Rinse and halve the tomatoes or cut into thirds. Peel onions and garlic. Cut the onion into strips and finely chop the garlic. Cut the mozzarella into cubes.

Mix remaining oil with the balsamic vinegar, lemon juice and sugar and season with salt and pepper.
4.
Rinse the basil, shake dry, pluck a few leaves and aside for garnish. Cut the remaining leaves into strips. Mix with all the prepared ingredients and arrange on plates. Serve garnished with the remaining basil leaves.
